The Ships operate to the highest standards of safety and hospitality.  The company is headquartered in Cairns, in Tropical North Queensland, and offers a friendly, challenging and very rewarding environment to work in. The scenery is quite nice too!

Our cruise itineraries include the Great Barrier Reef, Tasmania, Western Australia’s Kimberley region, PNG, and Asia. To support the expansion of our company, we are now looking for Apprentice Chefs to join our growing fleet.

Reporting to the company’s Purser and Chefs on board, you will need to be comfortable with working at sea and have a passion for food and customer service. You will maintain the product quality and consistency as well as the Public Health standards, and Food Safety standards that are followed in the galley on board.

TASKS

  • Responsible for the preparation of food according to the standards and quality levels set by the Company at all times
  • Ensuring that high quality and presentation are delivered on schedule
  • Ensuring proper equipment operation/maintenance and proper safety and sanitation in kitchen.
  • Take direction of Chefs on board

REQUIREMENTS working towards – 

  • Apprentice Chef, First, Second or Third year Apprentice will be accepted.  
  • Prior Marine industry experience will be highly regarded. Candidates with Certificate of Safety Training/STCW95 (AMSA endorsed), First Aid, CPR, Marine Cooks, AMSA medical qualifications will be highly regarded
  • Proficiency in all aspects of food safety, including HACCAP and Food Safety Supervisor
  • Positive communication skills, energy and attitude
  • A flexible and motivated team player and a high degree of social competence
  • Management and organisational skills
  • Takes pride in appearance
  • Ability to work under pressure
  • This is a salary position Working 6 months per year, equal time on/off

Our guests come largely from Australia with a growing clientele from key western global markets including North America, UK, Europe and NZ.  Our itineraries include The Kimberley, the Great Barrier Reef, Cape York and Arnhem Land, Tasmania, Papua New Guinea, South Pacific and The Indonesian Islands. To support the build out of our company, we are now looking for expressions of interest from experienced Cruise Attendants to join our growing team.

Cruise Attendant placements will be in February, March and April 2019, and we are looking for a well presented, bright attitude, team orientated individuals to join our onboard Hospitality team!

Responsibilities include:

–    Food and beverage service
–    Housekeeping
–    Kitchen hand

As representatives of Coral Expeditions, you will have a passion for creating a memorable and quality experience for our Guests and meet the above criteria, as well as;

Minimum Criteria:

–    Be available to spend up to 6 weeks away at sea
–    Have proven hospitality experience
–    Be an Australian citizen or permanent resident
–    Hold a current passport with at least 12 months validity
–    First Aid Certificate and CPR
–    QLD Responsible Service of Alcohol, MSIC card, ASSB
–    AMSA endorsed Certificate of Safe training/STCW95

–    Punctual, reliable, hardworking

Coral Expeditions is Australia’s pioneering cruise line with a 34-year history of innovation and high quality marine operations.  We operate a fleet of 3 Australian flagged small ships with a new ship joining our Fleet in 2019. Our ships operate to the highest standards of safety and hospitality.

Our guests come largely from Australia with a growing clientele from key western global markets including North America, UK, Europe and NZ.  Our itineraries include The Kimberley, the Great Barrier Reef, Cape York and Arnhem Land, Tasmania, Papua New Guinea, South Pacific and The Indonesian Islands.

To support the expansion of Coral Expeditions we are engaging in expressions of interest for Engineers.  Placements will be in February, March and April 2019, and we are looking for well presented, bright attitude, team orientated individuals to join our onboard deck team!

Responsibilities include:

–    Planned maintenance and services to manufacturers recommendations and   survey requirements
–    Upkeep of workbooks/records
–    Review the Weekly/monthly maintenance work list in the scheduled and unscheduled work requirements and identify hazards.
–    Main and auxiliary engine lube oil consumption and main engine running hours for planned maintenance.
–    The testing of all mechanical safety devices as fitted.
–    Condition monitoring of propulsion plant
–    Maintenance of firefighting equipment and safety gear
–    Bunkering of fuel and oil as required
–    Comply with oil pollution regulations and maintain the oil record book
–    Comply with all regulations lSM codes of conduct and standard
–    Hotel defects attended to in a timely manner

The minimum requirements are:

–    AMSA Medical
–    AMSA endorsed STCW95 (CoST)
–    MSIC Card
–    AMSA Medical
–    ASSB
–    First Aid OR Medical Care on Ships & CPR
–    AMSA Engineer Watch Keeper or AMSA Engineer Class 2
–    Passenger Ship training

Rosters will require a commitment of up to 6 weeks duration whilst operating on extended coastal and overseas voyages.
